Bill Waddington studied tea for 20 years before opening TeaSource in Highland Park in 1996. He shares his top three tips for brewing the perfect cup:
- Always use loose-leaf tea—it is higher quality than bagged “tea dust.”
- Use boiling water for black and herbal teas. Delicate green tea tastes best when brewed with 170-degree water.
- Give tea space to expand by using an infusing basket.
