Lunds & Byerlys (lundsandbyerlys.com) shares more ways to make state fair-inspired eats at home or the cabin—thanks to recipes with easy twists on classic summertime treats. My family leans in hard to bonfire cuisine either at home or the lake, so these recipes will surely make the trip to the backyard or Up North.

Banana Split on a Stick
  • bamboo skewers
  • ¼ lb. bananas, peeled and sliced into chunks
  • 1 ¼ lbs. fresh pineapple, sliced into chunks
  • 16 oz. strawberries, hulled
  • 10 ½ oz. brownie bites
  • chocolate sauce, optional
  • dry roasted peanuts, chopped, optional

Alternate bananas, pineapples, strawberries and brownie bites on a skewer. If desired, drizzle chocolate over the skewers, and sprinkle with chopped peanuts. Serve. (Tips: For a summer twist, toast over the grill or bonfire. Be sure to soak the bamboo skewers in cold water for 20–30 minutes before grilling or placing over the bonfire.)

Brownies on a Stick

Brownies on a Stick

  • bamboo skewers
  • 10 ½ oz. brownie bites
  • 12 oz. marshmallows, large
  • 16 oz. strawberries, hulled

Thread brownies onto skewers, along with marshmallows and strawberries. Lightly brown the marshmallows with a cooking torch or a gas stove burner. (Tips: Kick up your bonfire vibes by toasting the marshmallows over an outdoor fire before placing them on the skewer. Be sure to soak the bamboo skewers in cold water for 20–30 minutes before placing over the bonfire).
